Dairy Free Protein Macaroni & Cheese



  • ½ Cup Raw cashews (soaked in water for 30 minutes)
  • 1-½ Cup Water
  • 1 Cup Cooked butternut squash, cubed
  • 3 Tbs Lemmon juice
  • 1 Scoop FITCRUNCH collagen peptides
  • 2 Garlic gloves
  • 1 Tbs Lemon juice
  • ½ Tsp Onion powder
  • Tsp Nutmeg
  • Pinch Cayenne pepper
  • 1 Tsp Dijon mustard
  • Salt and pepper to taste


  • 2 Cups Noodles of choice


  • Combine sauce ingredients in blender and blend until smooth.
  • Pour sauce into a skillet and cook on low for 2-3 minutes to thicken if needed (add leftover pasta water if sauce gets too thick).
  • Add cooked noodles and stir to distribute evenly.
  • Optional to top with fresh parsley.
  • Enjoy warm!
