In a saucepan over medium heat make a simple syrup using lemon zest, honey, collagen peptides and water.
Stir constantly.
Bring to a boil then simmer for 5 minutes.
Set aside too cool.
Combined cooled simple syrup and freshly squeezed lemon juice than pour through a strainer.
Place mixture in freezer in a shallow dish and scrape with a fork every hour until frozen.
